On November 7th, 2018, 28 students (23 master students from Class 2018 in Rural Development, and 5 Ph.D. students) had their first field trip to the Sanggang Village, in Hebei Province. Located in the Western mountainous area of Yi County, Caohe snake through the village. The total registered population is 654. There are currently, 6 village-groups as well as 173 households. The village is blessed with 118.61 acres of agricultural land and 3130.00 acres of mountain area. The staple crops on this peaceful land are corn, sweet potato, peanuts, walnuts, and persimmons.
One who tastes the local snacks will find himself immediately enamored of Sanggang Village. That’s what happened to the 28 students. The first stop for them was the “Nested Market Center”, where the local snacks, such as dried sweet potato slices, nuts and shaobing, were offered with kindness. The richness of the taste, as well as the crispness, and texture magnetized the tongues so much, that the students found themselves continuing to savor every mouthful, while watching the introduction video of the village.
After the introduction and snack break, students were divided into 5 groups and led separately to the local households of 5 “Nested Market” community members for lunch. The dishes were delicious and delightful. Laughter and chatter filled every room. “I haven’t had a family meal for 3 month” said Shabbir, a Ph.D student, “and I feel so honored and grateful”.
After expressing thanks for the generosity, the students started their research. Each group interviewed 3 households on average, and spent time visiting crop lands as well as food-processing workshops. The condition of the households varied in size and standard. Some households housed elderly couples whose financial source was mainly pension, while other households rely on selling persimmons to update equipment for producing glass noodles. In the middle of the village, the students visited the workshop for glass noodles and were introduced to the process of making the noodles.

Around 3:30, the students were guided to a family for the last activity—tasting Tofu Jelly. The Jelly can be mixed with either leek sauce or sugar according to the individuals’ preference.

With the silky texture of the jelly and the savory flavor of the soy beans, the field trip announced its successful completion.
